Menu Plan Monday

Another week, another menu. I decided that I am going to try planning out our lunches this week. With the husband home from work for the next few weeks to help me out, lunches need to be more than whatever we can find to snack on. So maybe if I write it out I can make sure that we can be a little more prepared once lunchtime comes.


Breakfast

smoothies, biscuits, cantaloupe x2
fruit, toast
peach muffins, sauage patties
peach muffins, smoothies
pancake/sausage muffins
baked oatmeal (make extra to freeze)

Lunch

Menu Plan Monday

I realize that relying on my freezer meals means that we will be eating more meat, but I am sure the husband won't mind! Only a couple things are actually coming from the freezer this week because I feel great and love being in the kitchen. Except in the mornings. I really need to get my freezer restocked with breakfast items. Now if only I could teach the kid to get toast his own frozen waffle in the morning so I don't have to get out of bed...

Menu Plan Monday

I picked up my first CSA share of the year (and ever!) Friday and included were two GIANT cabbages. So this week's menu is going to be filled with green cabbage. So if you have any to-die-for cabbage recipes, feel free to send them my way and they might get worked in/exchanged for something else on the menu :)

Hopefully I will get some use out of my freezer meals pretty soon, as this baby needs to hurry up and make his appearance :)

Menu Plan Monday

I am full-term now, so my meals from now on are going to start being even easier (as if that is possible!). I am also trying my hardest to buy as few groceries as possible since I do have so much food in the freezer/pantry that I can use up. And because I have spent so much this year already. I am alright in the meat/grain/veggie department, but we are down to the bare minimum as far as fruit goes. I really need to stock up on some frozen fruit (although I guess that will actually drive up what I spend this month)!

Menu Plan Monday

Here I am on Monday night writing out of menu for the week. But at least I am doing it! I will admit that I did not cook today. I did not feel like eating so was only going to whip up something simple for the husband, but he told me not to worry about him since I wasn't going to eat. The kid so far has eaten 1/2 lb of strawberries and some cheese. I might split an apple with peanut butter with him later. But I know that we can't live off fruit, cheese, and  almonds (the husband's snack when he came home this evening) all week, so here is my plan.

choices of: cereal, oatmeal, muffins, waffles, smoothies, caramel apple oven pancake, scrambled eggs

Dinners

tacos and refried beans
chicken wings, carrot sticks (and what else goes with chicken wings?)

Menu Plan Monday


While I may not always follow my meal plan to a T (that's why you'll often see the same meals repeated for two or more weeks!), I am always glad that I have one. It just makes things so much easier to know ahead of time what I am supposed to cook. If anything needs to be soaked or defrosted ahead of time, I am able to do that. I even found a simple way to keep track of my meal plan for the week that I will be sharing sometime this week. 

Breakfasts

choices of: waffles, fruit, smoothies, muffins, caramel apple oven pancake, eggs

Dinners

country style steak, garlic mashed potatoes, corn, green beans
black beans with quinoa
lemon chicken over couscous and peas
black eyed peas, collards
soy marinated salmon, brown rice, stir-fry vegetables 
dinner with family

I promise that every dinner includes at least one vegetable, but since I have big bags of frozen ones, I don't always post what I am making unless it is something specific I want to go with that meal.

Menu Plan Monday


I have not posted in almost two weeks. At first it was because life got in the way and there were more important things for me to handle than this little ol' blog. But then I just got out of the habit of blogging and just couldn't sit down and write a single post. Menu planning is like that. It can be an enjoyable and rewarding experience that becomes second nature the more you do it. But it is also easy to get out of the habit of doing it and incredibly hard to make yourself jump back in. But that is what I am doing. I am making myself jump back into it - blogging and menu planning! I enjoy both but sometimes I just need a little push to do things :)

Menu Plan Monday

I am pretty darn proud of myself right now - I am typing up this post on Sunday. Sunday! This week I will have a menu plan that wasn't created about 3 hours before I needed to start cooking meal #1. But here is where I am not proud of myself - I still did not make the chickpea curry this week! Two meals got knocked off the menu due to schedules and circumstances and the curry made that list because I never got around to actually soaking my beans. And I like to soak my beans.

Here it is, halfway through the day on Monday, and I am just sitting down to write a menu plan for the week. Part of me started to say "forget it", but I knew that that would just cause me to have a horrible week. When I do not have a game plan (at least a general one), the week just does not go very smoothly. And running around after a toddler 7 months pregnant requires all the smoothness I can get!

Menu Plan Monday


This week leaves the kid and me by ourselves for several dinners. While I am usually lazy and we just munch when that happens, I really want to make sure that we are still eating well-rounded meals. So that is my goal. I do not have as many dinners planned, but this is what I have in mind as I am sure there will be leftovers or family dinners (meaning me mooching off the parents) involved :)

lots of waffles (I could honestly eat waffles everyday!), eggs, cinnamon scones, oatmeal

Dinners
Quinoa and black beans burritos
marinara sauce over spinach and white bean balls and rice
spicy black bean burgers and baked sweet potatoes

See, I told you there wasn't a whole lot planned. But I am positive we will still eat well this week!

Menu Plan Monday

I did not have a menu plan last week. It is not that I did not post one, I just didn't do one. I never really took the time or energy to do it. And boy do I regret it! I am not a very creative person who can just decide what to cook in an instant and without having a menu to go by, I was lost! I also had no motivation to cook as I couldn't really think of much (though a couple nights did turn out really well!) TO make. So even though the idea of making a menu at 11 pm on a Sunday night (hey, I'll take my computer time when I can get it!) does not exactly sound like fun to me, I know that my week will go much smoother if I make a menu. It will also allow me to do any prep work before, oh, 4:30. Why is it that the only meals I can think on the spur-of-the-moment to cook revolve around dried beans?


Breakfasts

choices of smoothies, eggs, soaked oatmeal, toast

Dinners

curried chickpeas (how long have I been planning on these??)
enchiladas
black bean burgers (making extra to freeze)
chicken crepes
fajita pizza
baked potatoes with broccoli and cheese
pinto beans and cornbread

My meals this week have a big focus on meatless meals. Not only is this (generally!) much less expensive, but I am also trying to be more diligent on eating meat sparingly. While that can mean different amounts to different people, I am aiming for one meat (including poultry but not fish) dinner a week, two at the most (breakfasts and lunch are not very meat based right now as it is). While I know many wives with husbands that scoff at the idea of not having a big hunk of meat on the dinner table, I am very fortunate to have a husband who is perfectly content eating a meatless meal. Actually, he would probably be content eating a bowl of pinto beans and cornbread every night. :)

Menu Planning (in five easy steps!)

Many people think that you have to be some super organized person to menu plan. Believe me, you don't. If I can menu plan, anyone can. The thing is, there is more than one way to go about it. The only point is to have at least some sort of idea of what you are going to be eating at some point over the next week/month so you can have some sort of game plan at the store and in the kitchen. Sounds real exact, huh? Menu planning is no a one-size-fits-all thing. There are many ways to approach it that appeal to different personalities/situations.  Here are the different ways you can approach menu planning:

3 Meals a Day + snacks

This is the most detailed of meal plans. This requires you to plan out pretty much everything you are going to eat. You plan what you are going to eat for every meal, including side dishes. You would also plan for any additional snacks or dessert you will be eating. One advantage to this is knowing exactly what you need to buy at the grocery store and how much. You can plan to use leftover ingredients on another day so that you have less waste. One disadvantage is of course the time needed to plan. It also makes it harder to take advantage of some unexpected sales and use unplanned for leftovers. I feel this type of plan would especially be beneficial to larger families, though.

Dinners Only

This is generally what I do (though I try to list ideas for breakfasts just to show you what we eat) because I am not organized enough to do three meals (though my goal is to slowly work my way there). I like to also plan my side dishes (though this doesn't always get done), especially if we are eating a meal that requires a certain side dish (like salmon patties). The advantage of this way is that you get what is generally the biggest/hardest meal out of the way in terms of planning. You are not standing in front of your fridge at 5:00 wondering "what the heck am I going to eat?" either. The disadvantage is that you still have to guess at what you need to buy for the other meals, as well as what you are actually going to eat.

General Idea

This is the most laid-back way to approach menu planning, but it can still save money! If you are the type of person/family that has a hectic schedule or you tend to eat the same meals on a regular basis, this could work for you. With this approach you simply have an idea in your head of foods you would like to eat during the week and keep food in the house that would allow you to make various meals. One advantage to this is when you have events that just pop-up, your meal plans are not wasted or messed up. It allows for you to be spontaneous and change your mind (because you never really made up your mind!) when your appetite changes. The disadvantage would of course buying too much/not enough at the store and being at a loss of what to eat on those  days you are feeling unmotivated/uncreative.


So now you know the three general approaches to menu planning - from the super organized to the laid back. But how do you do it? There are many ways to go about it based on the approach you take and the way you shop, but here is the basic game plan in five easy steps to help you get started if you have never done this. It can be adapted to fit your needs.
  1. Take stock of what you already have in the house. You can do this formally, with a pen and paper, or in your head. Just look around and see what foods you already have in your freezer, fridge, and pantry. What kinds of proteins do you have in the freezer that maybe you have forgotten about? What about starches? Any produce that needs to be used up? Using what you already have is a great way to save at the store.
  2. Make a list (again, this can be done on paper or in your head) of foods you already like or can make using the ingredients you have. Use recipe sites if you need to. Food.com and Epicurious are sites with great ideas and allow people to comment on the recipes they have tried. I especially love Allrecipes because it has a section where you can search using the ingredients you have.
  3. Check the store circulars. Between the newspaper, home mailings, and the internet, most stores give you easy access to what is on sale. Is there anything on sale for a rock bottom price you can't pass up? Incorporate those in your meals for the week.
  4. Make a finished list of the meals you are going to make for the week. Once you have done this, go ahead and add side dishes (again, based on what you have/what is on sale). You can assign specific days based on what you have going on that week (or if you like to have theme dinners like Taco Tuesdays) or just have a list to pick from during the week.
  5. Now you are ready to hit the store (but not on an empty stomach!) with a list of ingredients you will need. Be prepared to make substitutions when you get there in case you find something that would work just as well at a better price. Ground turkey cheaper than beef? Substitute it! Green beans cheaper than broccoli? Substitute it!
So this is a very basic outline for menu planning but it should give you a good jumping off point. There are as many ways to menu plan as there are personalities and it seems that no two people do it the same. Start slowly and try it a few different ways to see what works best for you. Any way you do it it will still save you time and money !

As much as I am looking forward to some of this week's meals, part of me is ready for the week to be over already. Why? So I can start grocery shopping for next month of course! But I am looking forward to this week's menu. I am trying a new recipe (okay, okay no recipe will be involved as I just make most things up on the fly) as well as reinventing a recipe to make it a little more whole-foods-friendly. Hopefully that goes well and I can share it with you guys! I also fermented my first vegetable recently (cabbage) and hope it turns out well!

I was doing so WELL there for a while about getting up my menu plan in the morning. Oh well, life gets in the way. I am running pretty low on funds for the month so I am trying to just use what I already have as the basis of my meals. But then again, isn't that what I normally do :)

omelets, crepes (Thursday is going to be our Valentines day)

french toast sticks (hopefully some will get frozen!)

Since we had the plague in my house last week, we definitely did not eat everything on our menu plan from last week. Oh well, more food for this week! I've decided that for our health we need to eat more fish, so every week there will be some kind of seafood for dinner.I am also trying (once again!) to plan out breakfasts. We will see (again) how this goes. I'm not even going to think about lunch, though...that is just too much planning!

Menu Plan Monday






 Some of the items this week may look famliar, as they got pushed onto this week's menu from the last two. There were days where we had unplanned leftovers or we were out of the house for dinner. Or I could not use my oven because my pilot light went out and I did not feel like cooking anything on the stove because I wanted pizza (I didn't actually even get pizza that night). Hopefully the pilot light will be replaced on Thursday (and will not be a very expensive part!) but until then I can not use my oven. That will make snacks for the first part of the week a little tricky.
