I have had bean burgers on the menu now for weeks and finally got around to making them - and I am glad I did! They were delicious ('not bad' as the husband says which is just about the only compliment that is going to come from him) and so filling. And cheap! I barely finished mine and the husband left about 1/4 of it. He said he is coming back for it later, though.
Black Bean Burgers
3 cups cooked black beans (or 2 cans rinsed and drained)
1 egg
1 cup coarse oat flour (oats run through blender/food processor until not powder but not full flakes)
1 carrot, shredded
1 small onion, diced small
3 cloves garlic, minced
2 tsp oil plus more to cook patties
1/2 tsp each salt, pepper, cayenne pepper
1 tsp hot sauce
1. Saute onions and garlic in oil until soft.
2. Meanwhile, put beans in bowl and mash (leaving some whole beans). Add rest of ingredients and mix thoroughly.
3. Form into 6 big patties and refrigerate 30 minutes to an hour to allow them to firm a bit. Cook 4-5 minutes per side and serve with your favorite burger toppings.
Refrigerating them allows them to set a little better but is not necessary if you do not have the time. They will turn out just fine. I actually froze half of these to make quick meals at a later time. I need to make up a bunch more because veggie/bean burgers in the store are pricy (not that I pay what they want for them!) and can be full of mystery ingredients.
