Stovetop Tamale Potpie

I used to make a version of this all the time, only I baked it. When I was trying to think of easy meals to make with already cooked ground beef I instantly thought of this and knew I had to make it since it has been so long. Only problem is that our house gets HOT in the evenings now and the thought of turning on the air conditioner did not sound very good to me. So I decided I would make it on the stove top. It still heated up the kitchen, but not nearly as much as the oven and it still turned out great! This is a simple meal to throw together (what meals do I make that aren't?) with ingredients I always have on hand. 

Stove top Tamale Potpie

1/3 lb of ground beef (you could use a little more or none at all but 1/3 lb is what I had frozen for use)
1 1/2 cups (or 1 can) pinto beans (you could substitute another bean of course)
1 can tomatoes
1 cup frozen corn
1/2 cup sweet potato puree
1/2 cup water

cornbread recipe mixed


1. Brown meat,drain if needed. Add rest of ingredients and mix to combine. 
2. Plop cornbread on top and sooth over top of filling ingredients.
3. Cover and cook over medium heat for 15 - 20 minutes. 

I used a cast iron skillet for this but you could use another skillet if you need to. I served this with sauteed spinach. I don't know how well that "fit" with it but it was fast, easy, and delicious!
