Menu Plan Monday

I did not have a menu plan last week. It is not that I did not post one, I just didn't do one. I never really took the time or energy to do it. And boy do I regret it! I am not a very creative person who can just decide what to cook in an instant and without having a menu to go by, I was lost! I also had no motivation to cook as I couldn't really think of much (though a couple nights did turn out really well!) TO make. So even though the idea of making a menu at 11 pm on a Sunday night (hey, I'll take my computer time when I can get it!) does not exactly sound like fun to me, I know that my week will go much smoother if I make a menu. It will also allow me to do any prep work before, oh, 4:30. Why is it that the only meals I can think on the spur-of-the-moment to cook revolve around dried beans?


Breakfasts

choices of smoothies, eggs, soaked oatmeal, toast

Dinners

curried chickpeas (how long have I been planning on these??)
enchiladas
black bean burgers (making extra to freeze)
chicken crepes
fajita pizza
baked potatoes with broccoli and cheese
pinto beans and cornbread

My meals this week have a big focus on meatless meals. Not only is this (generally!) much less expensive, but I am also trying to be more diligent on eating meat sparingly. While that can mean different amounts to different people, I am aiming for one meat (including poultry but not fish) dinner a week, two at the most (breakfasts and lunch are not very meat based right now as it is). While I know many wives with husbands that scoff at the idea of not having a big hunk of meat on the dinner table, I am very fortunate to have a husband who is perfectly content eating a meatless meal. Actually, he would probably be content eating a bowl of pinto beans and cornbread every night. :)
