Another week, another menu plan. I didn't have one last week. We had a lot of eating out and such - it was my birthday week, so shoot me :)
Breakfasts

black bean soup, cornbread
whole chicken in crockpot w/ carrots and potatoes
lentil burgers w/ baked sweet potatoes, broccoli

salmon patties, macaroni and "cheese", green beans
spinach frittata
lemon pepper tofu and quinoa pilaf
I'm sure you are wondering about the "cheese" in macaroni and cheese. Well the husband is trying to drop a few pounds, so instead of using high-fat, high-caloric cheddar cheese, I am going to be concocting a sauce out of white beans and nutritional yeast. We'll see how that turns out. I am also cooking a whole chicken in the crockpot this week; I love doing that. It always turns out so tender and juicy. We always eat a little of the breast meat and the rest gets shredded and put in the freezer for quick meals. AND I get to make delicious stock out of the bones and skin.
